15 min, 12 Serves.

Each slice contains a ½ daily dose of Gut Healing Powder.

  • 150g Medjool dates
  • 2 tbsp Maple Syrup
  • 80g Tahini
  • Generous pinch of Himalayan Salt
  • 2 tbsp Coconut oil
  • 80g  Desiccated coconut

Simply pop everything into a food processor! Easy!

Press mixture into a container (approx. 12x12cm in size)

Added some black sesame and poppy seeds to the top for a bit of prettiness too

Then freeze for 30 minutes to harden.

Chop and munch!

N.B. A Sistema lunch box was used to mould my shape- it was REALLY easy to pop the mixture out once it was frozen by jiggling the plastic a little

Vegan Lime, Cranberry and Coconut Bliss Balls

  • 2/3 cup dried cranberries
  • 1 cup desiccated coconut
  • 1 cup almond meal
  • 2 tablespoons coconut oil
  • 1 tablespoon maple syrup
  • 1 ½ teaspoon lime rind
  • 1 tablespoon lime juice
  • 6 full scoops Gut Healing Powder

Process cranberries until finely chopped. Add remaining ingredients and process, using the pulse button, until mixture comes together.

Roll into 12 balls. Roll balls in extra coconut to coat.

Didn’t process any of the ingredients, added all together and mixed and rolled.

Peanut butter choc

  • 240g (1.5 cups) pitted dates, soaked in hot water for 20 minutes to soften
  • 4 tbsp cacao
  • 3 tbsp unsweetened desiccated coconut
  • 1 tbsp coconut oil at room temp.
  • 1 tbsp peanut butter (any nut or seed butter can be used instead)
  • 1 tbsp chia seeds
  • 1 tsp pure vanilla extract
  • 100g unsalted peanuts (use hazelnut pieces, coconut flakes, cacao powder, chia or sesame seeds as an alternative)
  • Two full scoops of Gut Healing Powder

  1. Place the soaked and drained dates in a food processor and add the cacao powder, Gut Healing Powder, coconut, coconut oil, peanut butter, chia seeds and vanilla extract.
  2. Blend until all ingredients are well combined and a thick dough is formed. It should stick together between your fingers. If it's too wet, add a little more cacao/Gut Healing Powder and if it's too dry, add a splash of water.
  3. Use the palms of your hands to roll the dough into even balls.
  4. Place the peanuts into a blender or food processor and process for about 60 seconds until they're broken into course, crumbly pieces.
  5. Place the peanut pieces in a bowl and roll each bliss ball in them, coating them evenly.
  6. When each ball has been coated, place them in the fridge to chill for 20-30 minutes, then serve.
